I am interested in only the simplified card type ( or HanziBoth if the simplified card type is not available for that note).

I can't find an easy way to remove the unwanted card types.

When I tried to change the Chinese note type to remove the unwanted card types, it only applies to existing notes. A new note type seems to be created when I use this tool to add new words.

It would be great if the tool allows me to customize the note type.

You can suspend cards that you do not want to see. Search for e.g. card:Pinyin in Anki desktop's "Browse" interface, select all the results, then choose Cards > Toggle Suspend. See the Anki manual for more details.

I can also add checkboxes to the UI to allow you to select which card types you want to suspend when you add cards to your deck. Keeping this issue open to track that feature.

Thanks. I tried suspending the cards.

However, it is not convenient for me because the suspension is not preserved when I share my cards with my kids.

I found a workaround by changing the note types manually each time for now.

I can see your suggested UI change may help others for whom suspension may work well.
