Add Y Meadows to ADOPTERS.MD (#1376)

At Y Meadows we use KNative internally for our workflow automation application. Each step in our workflow is a call to a KNative Service using KNative Serving. This way we can use any Docker container to build a step and it works when needed and scales to zero when not in use.
