Running with windows-latest is failing:

This is because we use a container for Postgres. Containers are not supported:

The OS matrix works as expected, but running it exposed some issues that the MUD monorepo has with Windows:

• in prepare we use mkdir -p, which doesn't work for Windows. We could use mkdirp instead
• we use Bun to generate docs, which doesn't support Windows
• the copy-templates.sh bash script relies on Unix commands convert copy-templates.sh to a node script #2344
