You could for example steal take inspiration from the sidebar of the iPad's PDF reader or move some of the items from the menu to the title bar (which currently is mostly blank on wide screens). Zooming out of pages by default might also be useful.

I have many ideas myself as well, but this is a free work I do in my free time which is very little lately.
If I get some time, I will try to improve this aspect.
While MJ PDF is not awful on a tablet, it could definetly be optimized. The default iPadOS PDF reader might be a good reference.
