The function will take raw data (in the form returned by the function being authored in issue #23), and shape it into the demand data that will be used by the main package functions.

This issue is superseded by the additions in #54. Within that PR, the wl_stats() function bypasses the function proposed here, going straight from raw referrals/removals data, to a processed set of statistics.
