Currently both our HELM 'lab' chart and docker-compose 'lab' stack download the latest charts from github on first start.

Need to ensure the notebooks are refreshed subsequently especially during our work on 'master'

Update made to docker-compose environment - notebooks are now freshened on each start
Note added to docs
refreshed clone rather than pull - safer in case of end-user mods (for tutorial environment)
