Why is OpenSSL required for installation ?

I wanted to install the IDE tool, but I got the following error:

So, I'm wondering why would OpenSSL be required for a pest-ide-tool ? I fear that some personal information could be stolen for instance.

There's almost definitely no personal information being stolen, it's almost certainly another crate pulling it in. I'll check

It is a dependency of Hyper, which is a dependency of Reqwest, which is very widely used.

Reqwest specifically is used to check for updates.

You can use the settings described in the docs to disable update checking

it should also be possible to build hyper/reqwest against rustls instead of openssl (just need to disable the default features in the dependency)
