DOC: Updated wheel building instructions #2439

I worked through a couple of sets of instructions from https://docs.pyvista.org/extras/building_vtk.html#building-wheels, first on an Ubuntu 18.04 VM, then Ubuntu 20.04 VM, and then using the docker instructions. These were some changes made to get things to work more smoothly, I think they'll be useful for others as well!
