Describe the bug

The io.quarkus.it.mongodb.PojoResourceTest has been disabled in #27618 to allow migration to Yasson 3.0.1 during the Jakarata EE migration.

See #27506
See eclipse-ee4j/yasson#575

When the issue will be fixed on Yasson side, the test should be re-enabled.

The issue is fixed on Yasson side but it appears to be an issue between JSON-B and Restassured, see #27506 (comment)
