Hitting the return key should initiate the autocomplete selection

It did until recently. In fact, the documentation still says it does.

I removed the enter key as a default on purpose. I'd like to let the user decide whether or not he wants it to confirm the selection.

There is an option for that, you can specify enter as the command autocomplete-plus:confirm in your keymap.
