replace debug to release
Had to swap from Linux to windows as Aki Server does not want to start after building it on Linux

This PR introduces a GitHub Actions workflow that automates the integration of the SITCoop Mod into the SPT-AKI Server build process. The workflow is designed to streamline the build and release process, ensuring that each release of the SPT-AKI Server includes the latest version of the SITCoop Mod.
