It would be nice to be able to read Appledocs on an iPad. . .

Here's an example (looks fine on PC, gets stuck on being "zoomed in" on iPad):
http://jasperblues.github.com/Typhoon/api/index.html

. . (landing pages is fine, its the actual class docs).

Unfortunately I don't have time to contribute right now, so I can only raise an issue. . . (not a very big contribution, i know) ..

Thanks for pointing it out. There was already an issue reported regarding iPad and appledoc, though it was solved AFAIK - #119. I guess it only partially fixed the issue. Marking this as known bug for the moment; I'm not web developer, so hopefully someone more knowledgable can tune in and help out...
