Polygon Runway Amazing free one hour quick start into 3D illustration
Polygon Runway Youtube Roman also has a lot of videos where he speeds through his illustrations.
Ducky 3D Youtube Channel to learn blender mostly focused on Sci-fi Scenes and concepts
Grant Abbitt This is also a really good playlist to get started with blender
CG Geek Pretty random but awesome videos
Imphenzia Learn Blender the Swedish way: E to extrude, S to Scale

Polygon Runway The main illustrator course is 10/10 would definitely recommend
CG Cookie Monthly based subscription service kinda like egghead with all things blender and even some unity
Blender Secrets Amazing ebook with a lot of tidbits
