Document esbuildOptions in vite and rollup integration docs

While looking into #1111 I realized that the esbuildOptions config exposed by the esbuild, vite and rollup plugins is only documented for the esbuild plugin. I've copy-pasted the same docs to the vite and rollup integration pages.
