As amsmath is frozen and doesn't define that many new commands using \newcommand, it might be worthwhile to allow loading it after unicode-math.

Yes, or at least an option "amsmath=false" with true as default

There might be lingering bugs with loading amsmath after unicode-math but it currently works... I can only assume this is largely to do with the clever use of the filehook package by @phst.
