Currently, plugins can only send logs at the end of the update function. Ideally, plugins would be able to send logs at any time, including in the setup function. Extism does allow plugins to send logs to the host, but these logs can only be written to a file (see here). Add a way that plugins can send logs through the host, alongside the normal Matricks env_logger logs.
