At 720p and 1080p, YouTube may have a video available in both VP9/WEBM and H.264/MP4. With YouTube's encoding settings, VP9 should be preferred for picture quality. Here's a reference from YouTube's blog. The quality difference is also perceptually noticeable in real-world viewing.
