If I use your project to pack my own binary, does it then also have to apply to the GPL-3.0 License? Or is this only the case if I e.g. directly include the source code into my own go project.

GPLv3 covers the code, so if you use pakkero as a library for a project, or modify pakkero's code, then it applies
In case of simply using pakkero to pack a binary, the binary you pack is an asset which is not covered by the license so you'l don't have to apply the license to your binary
