This adds a conda environment as well as a Dockerfile. Also the paths from Mendeley were updated.

Unfortunately CATALYST changed quite a bit by now, breaking compatibility with these scripts.
I added a Dockerfile and conda environment that should allow to still run these scripts with the old, working CATALYST version.
Currently I am working to also add Binder support to better allow users to explore these scripts.
The final goal is to upload an archive with the built docker container as well as the raw data and code to Zenodo, such that these analyses stay reproducible for eternity...
