I think it would be kinda cool to add for each magic mod a special dimension:
Thaumcraft - Twilight Forrest
Botania, Roots - Erebus
Astral Sorcery - Aether
Bloodmagic - ???

Should def look at Advanced Rocketry, mod seems way better than GalactiCraft, which was one of the week points in 2.x since lategame is the same thing over and over and planets lack content.
The rockets alone seem much more impressive and complex:

https://minecraft.curseforge.com/projects/game-stages is an interesting mod that sevtech used. Would be interesting to see how well that could be tied to the gregtech tiers. Bonus: it's open source

You know what I absolutely hate, getting the right painting on the wall. It's such a chore to get the right size and type. Therefore here's my suggestion:

Which adds the ability to add paintings as image files. There are some pre-made image files available, but you can also make your own.

Nuclearcraft if customised would be cool. the radiation and all the different isotopes could add some new aspects and you can tweak the mod quite nice in the configs.

1.12 has Game Stages, and it also has many extensions, which can restrict the development stage if you want.
And CraftTweaker in 1.12 has a lot of useful features, you can write those scripts just like writing code~

i hate you all, noone mentioned SuperCircuitMaker (i think amadornes would have more than enough time to update past 1.10) and Chisels&Bits

Edit: i agree tho that GameStages would be a nice thing, especially if we mix it with plugin for JourneyMap and Antique Atlas

For a more experimental, early development mod, since Witchery was never ported from 1.7.10, maybe by the time GTNH 3.0 is available, Bewitchment may be ready.

If you do end up adding things like Immersive Engineering and Immersive Petroleum, please consider also Immersive Railroading. That would be kind of cool to see in GTNH 1.12

While Dynamic trees does indeed look hella cool, and is immersive in context to realism, its also kind of annoying. Just my opinion though. Maybe if drops were altered to give more? Having to basically deforest a biome to get a stack of wood is kinda meh.

Something else that would be kind of neat would be a movement mod like Smart Moving or Move Plus

If GregTech Community Edition is a thing in 3.0 this should be the perfect addon for it, not GregicAdditions or Shadows of Greg but this mod https://www.curseforge.com/minecraft/mc-mods/nukepowered-utils
