Pedestals can be powered 'off' with a redstone signal, adding redstone to the pedestal reverses its normal behavior.

• Crouch Left Click Specific Item in Offhand (Removes a Stack of Specific Item from the Pedestal)
• Left Click Specific Item in Offhand (Removes a Single Specific Item from the Pedestal)
• Right Click Specific Item in Offhand (Inserts Specific Item)
• Crouch Right Click Empty Hand (Displays Text in Chat Saying What the Current Redstone 'Resistance' is)

The Specific Item in this case is Redstone Dust.

• Inserting 1 Redstone Dust will make the pedestal stop transferring, and cause upgrades to stop working until a Redstone Signal is received.
• Inserting Multiple Redstone Dust will increase the Resistance the pedestal has to the Redstone Signal being received.

Pedestals can also emit Redstone when a comparator is used on it, the signal strength is based on how 'Full' the pedestal is with items.
