nixos/nixos-enter: Add IN_NIXOS_ENTER variable

Motivation for this change

I want to differentiate between running in nixos-enter and regular boots to skip tasks that don't work in chroots.
Works in a similar way to IN_NIX_SHELL for nix shells.
