@brendancol can you give feedback in this issue on the following:

• The images on the gallery scale well on mobile (most likely due to building the gallery with Bootstrap), but the plots don't scale well on mobile. What is the difficulty level of having the plot itself scale automatically (just smaller size, smaller fonts) when viewed on mobile?

Another issue - take a look at the Bokeh demo gallery:

the bokeh server apps seem to work well when viewing on mobile. Is this particular to something with bokeh server? Would it be easier if all of the plots were done with bokeh server?
