Listen::Listener v2.0.0 no longer implements #start! -- but v1.3.1 does. Adjust gemspec to handle the dependency

I just noticed this issue myself. Please update the Gemspec or update the lib to use listen 2.0.0.

This has been a chore but between getting a feature accepted into Listen 2.3 and some more fiddling, I'm ready to fix this. I'll make a new PR for it that closes this and the other issues.
