I have an fairly old Intel NUC and an even older monitor that's VGA only, but otherwise is fine and would make for a nice digital photo frame. Looking around, it's hard to find anything plug & play that's geared towards x86 instead of ARM boards. Would an x86 build be possible?

photOS is based on thingos. Unfortunatelly, it does not support x86: https://github.com/avanc/photOS/tree/master/board

But you could install any Linux distribution on the NUC and than integrate the main functionality by using photoframe.sh: https://github.com/avanc/photOS/tree/master/package/photoframe
