install.sh: adapt new version of kubectl

For kubectl after 1.24, the kubectl version command will print WARNING: This version information is deprecated and will be replaced with the output from kubectl version --short. Use --output=yaml|json to get the full version. and return a non-zero codes.

This PR uses the kubectl version --output=yaml for the convenience to get gitVersion from it.
