Datefields defaults don't set a value

Describe the bug
Materialize defaults datepickers to select the current date as the default value, but due to how values are binded to v-models, this is not actually happening.

To Reproduce
Steps to reproduce the behavior:

1. Login to Budget.io
2. Go to create a budget
3. Try to proceed with a datepicker field without selecting a value

Expected behavior
All datefields need to have a default v-model value of the current day.
