So far everything seems to be working.

Worked after adding the following labels to the cockroach-operator-system namespace:

          labels:
            pod-security.kubernetes.io/enforce: privileged # baseline
            pod-security.kubernetes.io/audit: restricted
            pod-security.kubernetes.io/warn: baseline # privileged
