Eyes are positioned at their limits most of the time. Find a way to smooth them.
Maybe try a hemisphere projection algorithm, on top of the surface/screen, extending towards the viewer and position the eyes so they look along the radius of the sphere towards the point on the surface (where the mouse pointer is also 2d-projected, assuming a constant Z)
Other suggestions? It would be nice to be able to simulate the behavior before coding.
