Was trying to add it manually / custom.iso but ran into the below error.

Would it be possible to add this to the automatic installation?

I installed Windows Server 2025 succesfully.

All you have to do is set MANUAL=Y and select the Windows 2022 vioscsi driver in the first screen.

There will be no automatic installation anytime soon, sorry.
