docs(v2): add ClarityChallenge to showcase

Motivation

We are using docusaurus to document a project that is running open-source machine learning challenges for hearing aid signal processing development. The project is funded by the UK government and will be running for the next 4 years. Our documentation will be growing over that time. We thought it would be cool for the project to appear in your showcase.
