[Bugfix]--add missing fields to AssetInfo comparator;

Motivation and Context

This PR adds missing fields in operator==() for AssetInfo. Also added is a comparison operator for the esp::assets::PhongMaterialColor struct.

How Has This Been Tested

All existing c++ and python tests pass.
