I see that there is a lot of activity in this project (thaks for all the contributors) but the latest release is quite old. Is there a plan to release a new version for GWT or the recomended way to benefit from all the new contributions is to build my own gwt using the latest version from the project?

The latest release is a little less than a year old, which is not terrible given GWT's history.
That said, we're starting to talk about finalizing a few pending PRs to get a release out, see https://groups.google.com/g/google-web-toolkit-contributors/c/JfIAPN6XFCo. Watch that mailing list for requests for volunteer testers to validate this release before we ship it. We could also use volunteers for reviewing pull requests.
