It seems that MacOS, Linux and Windows Subsystem for Linux use different syntax to install Nix. See here.
Currently the install.sh script installs Nix uses a non-documented (previously it was...I think) way. This way works well on Windows Subsystem for Linux, but shows issues on MacOS. I've built the install.sh script on WSL2, so it makes sense why things feel good there but not so much in Mach World.

The main issue seems to be when trying to source nix.sh.. It doesn't exist on MacOS (multi-user installation). I haven't tried Linux.

Need to use some form of conditional to handle separate operating systems.
