Document how to use a tomcat config file to override hbase connection settings

Right now we've hard coded the HBase connection information in src/main/resources/META-INF/spring/prod/dendrite.properties, but from what I've read there is a way to use some tomcat config file that can override these settings to point at the real HBase table. We need to document how to do this.
