I would love to be able to set different times for Sat and Sun than for Mon-Fri. UI-wise, it would necessitate a bigger change unfortunately: you would need to make a list of times to/from which you could add/remove entries.
In the olden days, I used to have ProfileMatic which could do a ton more than just airplane mode and which spoiled me tremendously (also, it was pretty crazy). Alas, I have since switched (back) from Meego to Android and really, airplane mode was the only feature I actually cared for. Screenshots 1 and Screenshots 2.

Maybe I could add an option in Settings, like "Advanced mode" that will enhance the UI. It's like having 2 Apps in the same App, because "Normal or Basic mode" would keep the actual UI, and "Advanced Mode" could offer a new UI.
Also, writing such new layer could answer #3 ! I'll try to make some sketches someday :)
This could be a list of events, each event being an on and off event, that way we could set several time windows per day, and each event could have different weekdays settings.
