Can you rename the superuser

Is there a way to be logged into your own server as the superuser but be displayed as a different name in the server to the others users instead of having your name as "SuperUser"?

No. But you can add your regular user to the admin group, which should have almost the same effect.

What would an admin user lack in privileges?

Nothing. But there are certain hard-coded things on the server-side that don't apply for regular admins. However, these are usually things you really don't want for a regular user anyway.
Examples include that the SuperUser can never be unmuted and it can never be renamed (and in general nobody but the SuperUser themselves can modify the SuperUser - e.g. in terms of e.g. resetting their texture).
