I think of this as a variation on roll-mode. It adds a whole new utility to the device, where it becomes an experimental logger for anything.
This could have a dialog to select file name, perhaps also the sample rate and which channels and the requested duration of logging
I understand writing to file is a complication somehow (not in linux tho, file-append is perfect for this.
It's ok if the max sample rate is limited to something that would not stress the computer, e.g. <10 samples per second. Should go down to extremely low rates e.g. 0.01 samples/sec
