It's all about getting the water out of the cucumber.
grate peeled cucumber into a bowl then get rid of the water (or drink it. It's tasty).
lay the relatively dry cucumber out on a plate then salt it generously.
after a while (if you have time, someone else want to estimate? not sure how important really) then i squeeze it as hard as possible through one of these old collapsible steamer / strainer things: https://www.pinterest.ch/pin/83175924364019695/
Finally, I chuck this cucumber in with a load of Greek yoghurt, however much garlic you want (the finer the better, squeezed through a proper garlic crusher?), and some tasy olive oil (not thin, tasteless stuff).
The type of yoghurt matters a lot.
Summary: get the right yoghurt, dry the cucumber, load it with garlic. Yum.
I would like to learn how to make tzatziki.
