Would moving from Telegram (a closed sourced application that requires account creation) to nostr as the primary way of communicating be possible? I see telegram being an ideological and maybe a privacy barrier for people interested in this project.

There is already some communication about Nostr happening in Nostr (follow me at 3bf0c63fcb93463407af97a5e5ee64fa883d107ef9e558472c4eb9aaaefa459d). We'll keep Telegram too until Nostr is mature enough to handle talks about itself, but it's perfectly fine to communicate only over Nostr if you prefer.

That's great!
Would including it in the readme be possible?
Honestly seems like a good idea for a back-up app to chat, would a Matrix room be a possibility for that too?

It would be interesting to write NIPS here: fostr.dev
