E: The repository 'http://repo.mobian-project.org bullseye Release' no longer has a Release file.
N: Updating from such a repository can't be done securely, and is therefore disabled by default.
N: See apt-secure(8) manpage for repository creation and user configuration details.

I noticed that as well. I see that Mobian has already transitioned away from Bullseye to Bookworm:

I was thinking of doing the upgrade as it recommends, but I have a feeling that I'd brick my stick as I'm sure it has some patches on top of Mobian.

Nope, the update is fine (my installations are brand new).
