• Can we create a new type of named entity category, such as Organization?

Hi,

unfortunately that isn‘t possible. I recommend simply using a tag (in the row below the comment field). It‘s not necessary to pick a category (place, person, event), by the way. I.e. it’s perfectly fine to just annotate with a single custom tag and no category at all.
