Does this only happens when recording MP4 or with all formats? For MP4 the most likely reason for this is that you are missing the h264 codec required. On Gnome gstreamer is used, on Arch you need to install the gst-plugins-ugly plugin for this.

If this does not solve the issue please look at the output of journalctl when this issue occurs. Gnome should log some more details about this.
