Looks good, though needs maturity as discussed in #220 But marking for approval since we haven't actually settled the maturity model in that issue.

Once we have the maturity levels, I think I'd just split all these dataset extensions into an openEO STAC repository where all these new extensions (dimensions, scientific, openEO storage profile, ...) could develop to eventually get official at some point.

Related to opengeospatial/ogcapi-features#168 - dimensions could also be added to the extents.

Will be developed sepatately within openEO and may be solved anyway by opengeospatial/ogcapi-features#168 - closed for now.
