Inconsistent flags in eepflash.sh

The 'help' option has the usual convention of a single-dash (-h) for the one-letter argument, and a double-dash (--help) for the longer version of the argument.

But then the read, write, file and type options use a single-dash for both the short and long arguments, which seems a bit unusual? :-/
