feat: iceberg source support merge-on-read table

Is your feature request related to a problem? Please describe.

Currently, iceberg source only supports copy-on-write iceberg table which means if an iceberg table containing delete files, then users cannot query this source. Obviously, it is so frustrating, because it means iceberg sources cannot read data written by iceberg sink. We can follow the iceberg spec https://iceberg.apache.org/spec/#scan-planning to support reading merge-on-read table.
