[DOC] Add codecoverage to iGenVar using seqan/app-template code #116

After the codecoverage is introduced to the seqan/app-template, we want to merge it into iGenVar, to benefit from it.

That means this issue is blocked by seqan/app-template#30 and a follow up PR seqan/app-template#46, which will clean up some cmake code of the app-template. ✅

This issue will be the penultimate issue of #30.
With #112 we want to esure to have a code coverage of 85% and thus resolving the epic.
