In terms of general documentation, Galette aims to be compatible with Galasm, which has a fair amount of docs (https://github.com/daveho/GALasm/tree/master/galer), but a non-commercial license. I didn't want to copy the docs (potential license pollution) or write my own (a lot of work, to just reproduce what already exists). So, if you want general docs I suggest you look there.
However, you're asking about a tutorial! What are you interested in? Is it the specifics of writing input files for Galette, or is it more the end-to-end flow, including programming etc.? For the latter, https://hackaday.com/2021/04/15/programming-pals-in-2021/ looks like it might be helpful.
If we can think of something quick and easy to help people get started, that sounds like some good documentation to add. If you can tell me what you'd like to know about, I can have a go at writing something.
I've added a minor tweak to the README.md to hopefully provide a little more info to first-time users, but I'm not sure where to go from here. Please let me know if there's anything specific you'd like added; otherwise I'll close the issue. Thanks.
