Is there a way to enable "clickable" links? It would be very convenient to open a link by tapping on it. Also, providing support for data detectors (phone numbers, dates, addresses, etc.) would be great.

Data detectors and clickable links seem to only be available when the text view is marked as not "editable". Although since we recently introduced note locking, we might be able to enable this for locked notes. But that's not entirely helpful if you don't feel like locking a note.
Why not implement it the way iOS does it in Notes.app? When the keyboard is hidden URLs are clickable. When the keyboard is shown the editor enters "Edit mode" and URLs become non-clickable.
