I wanted to look into how to help codesigning the macOS app I wanted to take a look at the macOS source and build setup, but I can't find anything. Where can I find that?

It's the same source code. I use xcrun safari-web-extension-converter to create an Xcode project, then some string replacements for versions and identifiers. Then building, notarizing, stapling, packaging and uploading the app.
